    For the Crust:

    1 cup flour
    1/2 cup shortening
    1/4 teaspoon salt
    1/2 cup mashed potatoes
    1 teaspoon baking powder
    1 cup water

    For the Filling:
    1 1/2 lb. Antelope steak
    1/3 teaspoon pepper
    2 tablespoons flour
    1/8 teaspoon ground cloves
    1 teaspoon salt
    Water

    Sift together the flour, salt and baking powder; cut or rub in the shortening, add the mashed potato and mix to a dough with the water, then chill while preparing the meat. Cut the steak into thin strips, dip each in the flour, salt, pepper and cloves which have been stirred together. Put a small piece of fat in the center of each strip of meat, roll up and place in a deep baking dish or casserole.

    Half fill the dish with water, cover closely and bake in a slow oven for one hour, after which remove the cover, roll out the crust and put it in place over the meat; return to and bake twenty-five minutes longer. A few small pieces of kidney, or oysters or mushrooms may be cooked with the meat to give variety in flavor.

    For better cuts.

    Marinate in butttermilk for five days, then wash off in cold water and saute in butter, garlic salt, pepper and accent. If necessary, slice into small pieces, preferably prior to marinating

    Roasts:

    Marinate in the same way and make into a stew. Brown first, then cook in wine or sherry with some celery, carrots, onions and small pieces of ham. Remove vegetables, blend, then add back to thicken the cooking solution. Use salt, pepper and garlic as requited. Also, a tbsp of sugar

    Poor Cuts

    Grind in a food processor. Add bacon fat, oregano, sage, garlic, sugar, salt, pepper, accent and mix into a sausage

    When I dress out a bear I always have plenty of trimmings to save for this recipe. This is an excellent dish, everyone admits they can't even tell it has wild game for the meat.

    Ingredients:

    2 lbs. bear meat, cubed to 1 inch.

    2 tablespoons flour
    1 teaspoon oregano
    1 tablespoon olive oil
    1/2 teaspoon salt
    5 celery stalks, sliced
    1/2 teaspoon garlic
    1 lb carrots, sliced
    5 large potatoes, peeled & sliced in chunks
    1 onion, sliced
    1 tbsp tomato puree

    First, marinate meat in buttermilk for one day. Then rinse in cold water.

    Lightly season meat with salt and pepper, coat with flour. Heat olive oil in a skillet, add meat and brown. Place the meat in a Dutch oven and cover with water. Add season salt and bring to a boil, cover and simmer for two hours.

    Add vegetables and more water if needed, simmer for one hour. puree, salt, and pepper, simmer for 15 minutes.

    Remove heat and let it sit for 30 minutes. Ready to serve. Serve with toasted bread or hot rolls.
